Cut the liver into fine slices.
Chop 6 cloves of garlic and a chilli pepper finely. to them add I table spoon of paprika, oregano, parsley, salt, olive oil and wine vinegar.
Cover the liver with this mix and leave the mixture for a while, though, it's not strictly necessary
Fry the liver in a pan back and forth and place it in a pan.
Pour over the mojo and cook for 10 minutes.
Serve in a flat dish, accompany with chips & mojo. Garnish with parsley.
